Executive Chef Elizabethtown College is seeking an Executive Chef for the Dining Services Department.This position will provide culinary excellence, leadership and management for the production team in the dining locations, relation locations and catering. This position will also plan and direct food preparation, provide innovative dining opportunities, offer nutritious and appealing selections and maintain high levels of quality and satisfaction for students, faculty, staff and guests. Essential Functions: Lead and monitor the preparation of all food and beverage items and cooking activities of food service personnel in all residential, retail, and catering operations; Ensures compliance with menus, recipes, production schedules, and quality standards; Working knowledge of food principles, food allergens and special dietary needs; Plans and coordinates food preparation for special events; Administers health and safety standards in compliance with university, state and federal codes regulations. Support quality assurance policies and procedures related to food, sanitation, equipment and facility maintenance and safety management; Personnel Supervision: Delegates duties and responsibilities of food service work to subordinates appropriately and holds employees accountable; Schedules employee work shifts, full time and part time, based on business needs to ensure the highest level of fiscal responsibility; Supervises the Production Supervisor, hourly production staff, and catering cook in absence of Catering Chef; Interviews/hires new dining staff personnel; Required Qualifications: Associates degree or equivalent vocational /technical training in culinary arts is required; plus five to ten years of culinary experience (college and university setting preferred); or equivalent combination of education and experience. This position requires a valid driver's license for business travel purposes (individual must have a US driver's license for at least three years; a motor vehicle record check will be run and the incumbent must pass the College's MVR rating system). Preferred Qualifications: Previous higher education culinary work experience, knowledge of Computrition or similar menu/inventory computer based systems and ServSafe certification.
